A quiet, standalone restaurant with just four tables, one of which is a private room. Chef Toeda, who represented Japan in the prestigious Bocuse d'Or culinary competition, handles everything from preparation to cooking by himself, crafting intricate and delicate French cuisine.
Every dish incorporates ingredients from the Shinshu region, elevated into an exceptional creation through Chef Toeda's unique techniques and design. The service is managed by his wife, who is also a sommelier. He began his journey at an Italian restaurant in Shiga Prefecture, later moving to Tokyo. At 22, he went to France to train at renowned establishments like Jean-Paul Jeunet, Georges Blanc, and Régis Marcon. After returning to Japan, he worked at famous restaurants in Osaka, Tokyo, and Karuizawa before opening Restaurant Toeda in 2011.
Both lunch and dinner at the restaurant are offered as a set menu course, consisting of about 10 dishes. The wine selection features around 100 varieties, primarily French wines, along with locally sourced Nagano wines. Wine pairing is also available, allowing guests to enjoy the best seasonal dishes and beverages that Restaurant TOEDA offers. Each dish is artistically presented on carefully selected plates, showcasing Chef Toeda's culinary world. Guests are invited to savor this experience amid the rich natural surroundings of Karuizawa.
